It’s Thursday. It’s a Bank Holiday weekend. Hell yeah. I’ve got some big plans for my three-day weekend, big plans in the kitchen that is. With the deadline for book number two (!) fast approaching, I’m taking advantage of some of the delights available to us in the British springtime and will be flexing my chef skills in the kitchen at home. With help from a hungry husband and toddler to taste test that is!
There are so many wonderful, locally grown vegetables available to us at the moment, including asparagus, radishes and rhubarb (yes, it’s a vegetable). If you’re looking for a little inspiration, there’s a new recipe up on the blog for a delicious Black Lentil and Spring Vegetable Salad. It’s a real celebration of British spring greens, and the radishes lend a delicious, peppery crunch to the dish.
