Classic Banana Bread

A cosy loaf to bake on a cosy weekend for the perfect snack or breakfast. Served best with a spoon of creamy coconut yoghurt and stewed berries.

Recipes

Ingredients:

  • 3 very ripe bananas
  • 100g vegan spread
  • 2 eggs
  • 100g coconut sugar
  • 120g self raising flour
  • ½ tsp baking powder
  • Pinch Malden salt
  • 1 tbsp oats

To serve:

  • Coconut yoghurt
  • Stewed blueberries (simmer 100g of blueberries in a splash of water, with 1 tsp agave nectar and a squeeze of lemon for 5 minutes on low heat)

Method:

  1. Pre-heat the oven to 180 degrees.
  2. Mash the bananas in a large mixing bowl. Add in the butter and combine well with the bananas. Add in the coconut sugar, leaving a little aside for the topping (about 1 tbsp) and combine. Then add in the eggs and beat together.
  3. Fold through all the dry ingredients.
  4. Tip the mixture into a lined loaf tin or distribute into 6 large muffin cases. Sprinkle over the oats and coconut sugar.
  5. Cook in the oven for 40 minutes or until cooked throughout. Leave to cool for 10 minutes or so before slicing.
  6. Top with coconut yogurt, and some stewed berries or enjoy by itself!
