Herby Rostis
Crisp, golden, breakfast perfection. Rostis are a classic, elegant and ultra satisfying breakfast or brunch, elevated by all the fresh herbs you have to hand. These crispy potato pancakes are delicious dolloped with greek or coconut yoghurt and finished a sprinkle of chilli.
RecipesMakes 2-3 rostis.
Ingredients
- 3-4 potatoes, grated
- A handful of parsley, chopped
- A handful of dill, chopped
- Juice of half a lemon
- 1 egg
- Salt and pepper
- 1 tbsp extra virgin rapeseed oil
To serve:
- Coconut yoghurt
- A small handful dill, chopped
- A small handful of coriander
- Chilli flakes
Method:
- Put the grated potato into a clean kitchen towel and squeeze it over a sink to wring out the excess water from the potato.
- Add a handful of dill and parsley to the potato mixture alongside a whisked egg, the lemon and some salt and pepper.
- Add some oil to a pan on high heat and when hot, add in half the potato mixture. Flatten it out into a pancake, whilst remaining intact. When golden brown, flip over to cook the other side. It should take around 3-5 mins each side.
- Top your rostis with a dollop of coconut yoghurt, a sprinkle of herbs and a little chilli for the ultimate brunch or breakfast. You could always add a poached or fried egg too for some extra protein!
