Open Sandwich with Tomatoes and Capers

Making the perfect sandwich or open sandwich is all in the detail. Great quality ingredients + good seasoning and you can’t go too far wrong.


Makes 4 slices.


  • 4 slices good quality bread, we use Bread Bread Bakery Rye here
  • 2 large handfuls good quality tomatoes, sliced
  • 2 tbsp capers
  • 1/2 red onion, finely sliced into rounds
  • 1/2 lemon, zested
  • High quality cold-pressed oil, we use Duchess Farms Rapeseed Oil


  1. Toast your bread just how you like it.
  2. Top with the tomatoes, capers, onion and lemon zest, then drizzle with a good glug of oil and season with salt and pepper.
