Raw Chilli Salad
Nothing beats a clean, crisp, crunchy side salad. This ones made with raw Asian vegetables, a lime-vinaigrette and punchy chilli. Perfect to cut through any main and savour as the summer sun goes down.

Ingredients
- 1/4 cabbage, shredded
- 1/2 courgette, sliced into horizontal rounds, at an angle
- 6 cherry tomatoes, halved
- A generous handful of beansprouts
- 1 red chilli, deseeded and sliced
- shallots, diced
- coriander, roughly chopped
- mint, roughly chopped
For the dressing:
- 1 tbsp olive oil
- 2 tsp rice wine vinegar
- Juice of 1/2 lime
- 1 tsp honey
- 1 clove garlic, crushed
- Salt and pepper
(Optional for garnish) Shichimi Togarashi
Method
- Make the dressing by shaking the ingredients together in a jar.
- Add all the ingredients into a large mixing bowl. Pour over the dressing and toss together.
- Sprinkle some Schicimi Togarashi over the top for some extra flavour.
- Serve cold as a side salad.
