Raw Chilli Salad

Nothing beats a clean, crisp, crunchy side salad. This ones made with raw Asian vegetables, a lime-vinaigrette and punchy chilli. Perfect to cut through any main and savour as the summer sun goes down.

Serves 2.

Ingredients

  • 1/4 cabbage, shredded
  • 1/2 courgette, sliced into horizontal rounds, at an angle
  • 6 cherry tomatoes, halved
  • A generous handful of beansprouts
  • 1 red chilli, deseeded and sliced 
  • shallots, diced
  • coriander, roughly chopped
  • mint, roughly chopped

For the dressing:

  • 1 tbsp olive oil
  • 2 tsp rice wine vinegar
  • Juice of 1/2 lime 
  • 1 tsp honey
  • 1 clove garlic, crushed
  • Salt and pepper

(Optional for garnish) Shichimi Togarashi

Method

  1. Make the dressing by shaking the ingredients together in a jar.
  2. Add all the ingredients into a large mixing bowl. Pour over the dressing and toss together.
  3. Sprinkle some Schicimi Togarashi over the top for some extra flavour.
  4. Serve cold as a side salad.
