Banana pancakes

Fluffy, banana-ey and delicious. We make these whenever we have an extra moment in the morning as we know they will nourish us and keep us fuller for longer. And we love jazz up the toppings to keep things exciting!

Recipes

Makes 4-5 pancakes.

Ingredients:

  • 1 1/2 banana
  • 80g oats
  • 200ml oat milk
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1 tsp maple syrup
  • 3 tbsp coconut oil
  • Toppings:
  • Coconut yoghurt
  • Stewed berries (see below)
  • Almond/cashew butter

OR

  • Blueberries
  • Spiced syrup
  • Sliced banana
  • Flaked almonds

For the stewed berries:

  • 150g frozen mixed berries
  • 2 tbsp water
  • 1 tsp maple syrup

Add the frozen berries to a pan with the water and maple syrup. Simmer for 5-10 minutes until softened and slightly combined

For the spiced syrup:

  • 150ml water
  • 200g maple syrup
  • 4 cinnamon sticks
  • 6 whole cloves
  • 6 cardamom pods
  • 200g pitted dates

Bring all ingredients apart from the dates to the boil. Once up to temperature simmer for 10 mins. Add the dates and simmer for a further 10 mins. 3. Remove from heat, remove the cardamom pods, cinnamon sticks and cloves then blitz with a food processor or blender until smooth.

Method:

  1. Thinly slice half a banana and put to the side.
  2. Add the oats, 1 banana, oat milk, baking powder, maple syrup, 1 tbsp coconut oil and cinnamon to a blender and blend until smooth.
  3. Add 1 tbsp coconut oil to a pan and leave to heat on high. After a minute add a tablespoon of pancake batter to the pan and smooth out slightly. Add two of the sliced bananas on top. Repeat.
  4. Flip the pancake after 2-3 minutes or when you start to see little bubbles form on the top of the pancake.
  5. Stack your pancakes high and add your toppings. Enjoy warm.
