Crab on toast
I first had a similar recipe to this at a friends house, instead of crab on toast it was crab with linguine and it was perfection, so much so I made it the very next week. Once you have the base recipe of the crab you can add it to anything, toast, pasta, lentils, or salad leaves.

Ingredients:
- Extra Virgin Olive oil
- 2 shallots
- 2 fat garlic cloves
- Small bunch parsley, finely chopped the stalks
- 1 red chilli, finely chopped
- 1 heaped tbsp tomato puree
- 200g white crab meat
- 4 slices sour dough
- 1 lemon
- Maldon salt
- Black pepper
Method:
- In a little olive oil soften the shallots and garlic, do this slowly ensuring they don’t burn, it should take about 10 minutes. Add the parsley stalks and chilli and cook for a few more minutes. Tip this mixture into a large bowl and add the tomato puree and crab, mix it through so that it’s warm, season to taste (usually a good pinch of Maldon and some grinds of black pepper).
- Heat a griddle pan until it’s piping hot and add your slices of sour dough. Turn once your blackened lines have appeared.
- Place the toast on a plate, drizzle with a little olive oil and top with the crab mixture. Garnish with some freshly chopped parsley, lemon zest, salt and pepper.
