Fig loaf cake
The cosiest of Sundays calls for a slice of an autumnal cinnamon-spiced fig loaf whilst delving into a good book. The secret to the best loaf cake? A caramelised coconut sugar topping.

Ingredients
- 400g figs, quartered
- 160g spelt flour
- 150g porridge oats
- 170g ground almonds
- 1 tsp baking powder
- 1 tsp cinnamon
- Pinch of sea salt
- 100g coconut sugar
- 350ml oat milk
- 5 tbsp extra virgin olive oil
- 2 tsp vanilla bean paste
Method
- Preheat the oven to 160 degrees Celsius.
- Put aside a handful of figs and put the remainder in a bowl.
- Add the sifted flour, oats, grounds almonds, cinnamon and baking powder into a bowl and combine.
- Add in the coconut sugar, olive oil, salt and milk to the dry ingredients, and mix gently to combine.
- Add in the figs and fold.
- Pour into a lined baking tin and top with the reserved figs as well as a sprinkling of coconut sugar.
- Bake for 70-80 mins until golden and caramelised on the top. Leave to cool in its container and then serve!
