Grilled Chicken with Courgetti and Pesto

Courgetti is the new pasta; mixed with some gorgeous pesto and teamed with grilled chicken, it creates a perfectly hearty and healthy dinner.



Julienne Peeler or Spiraliser


For the chicken:
1 chicken breast, skin off
1 tsp olive oil
3 courgettes

For the pesto:
1 handful of sunflower seeds
1 handful of cashew nuts
1 handful of spinach
1 handful of basil leaves
1 tsp rapeseed oil
Sea salt and black pepper
Rocket leaves, to serve


Place the chicken on a baking tray, drizzle with olive oil and grill on each side for 10-12 minutes until cooked through.

Meanwhile, using either a julienne peeler or a spiraliser, make the courgette spaghetti. If you only have a knife, slice very thin strips and then cut them into spaghetti. Place the courgette spaghetti in a bowl and set aside.

To make the pesto, place all the ingredients in a blender and blitz to a coarse paste. Add this to the courgette and combine well. Once the chicken is cooked, serve with the courgette, pesto and, if you want, some rocket leaves.
