Herby pistachio salad

This is the most simple, most perfect tabbouleh-style salad to whip up with minimal ingredients in literally 5 minutes. Herbs are absolute powerhouses of nutrients, the more herbs the better. We've added pistachios for some extraness, that really delivers.

Recipes

Serves 2-4.

Ingredients

  • 1 handful of parsely, chopped
  • 1 handful of coriander, chopped
  • 1 handful of mint, chopped
  • 1 handful of chives, chopped
  • 1 small handful of pistachios, shelled
  • 2 tbsp black kalamata olives
  • 100g quinoa, cooked
  • 100g brown rice, cooked
  • 100g queen chickpeas, drained
  • Zest and juice of 1/2 lemon
  • 1 tsp sumac
  • 1 tbsp red wine vinegar
  • Extra virgin olive oil
  • Malden salt
  • Cracked black pepper

Method:

  1. Lay out your mixed herbs, olives and pistachios on a big chopping board and chop together, with a large knife, until fine and combined.
  2. Add the quinoa, rice and chickpeas to a bowl and mix in the pistachio-herb mixture.
  3. Add a glug of olive oil, the zest and juice of the lemon, sumac, red wine vinegar and a generous seasoning of salt and pepper and mix again.
  4. Serve in a bowl by itself or as a little side salad. Delicious!
