Herby pistachio salad
This is the most simple, most perfect tabbouleh-style salad to whip up with minimal ingredients in literally 5 minutes. Herbs are absolute powerhouses of nutrients, the more herbs the better. We've added pistachios for some extraness, that really delivers.

Ingredients
- 1 handful of parsely, chopped
- 1 handful of coriander, chopped
- 1 handful of mint, chopped
- 1 handful of chives, chopped
- 1 small handful of pistachios, shelled
- 2 tbsp black kalamata olives
- 100g quinoa, cooked
- 100g brown rice, cooked
- 100g queen chickpeas, drained
- Zest and juice of 1/2 lemon
- 1 tsp sumac
- 1 tbsp red wine vinegar
- Extra virgin olive oil
- Malden salt
- Cracked black pepper
Method:
- Lay out your mixed herbs, olives and pistachios on a big chopping board and chop together, with a large knife, until fine and combined.
- Add the quinoa, rice and chickpeas to a bowl and mix in the pistachio-herb mixture.
- Add a glug of olive oil, the zest and juice of the lemon, sumac, red wine vinegar and a generous seasoning of salt and pepper and mix again.
- Serve in a bowl by itself or as a little side salad. Delicious!
