Homemade Granola with Soya Yoghurt and Berries
Craving something with a little crunch? Why not try our healthy homemade granola, made with hearty porridge oats, wholesome nuts and a sprinkling of delicious coconut.

For the granola:
400g porridge oats
1 tbsp runny honey
1 tbsp rapeseed oil
75ml rice milk
75g pecans
1 tbsp desiccated coconut
To serve:
1 tbsp soya yoghurt
1 handful of blueberries
1 handful of raspberries
Method
Makes 500g granola (5 portions)
Heat the oven to 180C. Place the oats in a mixing bowl and add the honey, oil and the rice milk and combine well with your hands; the oats should form small clusters.
Spread out on a baking tray and place in the oven for 15 minutes.
Remove and add the pecans, and bake for 5-8 minutes until the oats are lightly golden. Remove from the oven and leave to cool.
Transfer the oats to a large bowl and add desiccated coconut. The granola will keep for up to 30 days in an airtight container.
Serve 100g granola with the soya yoghurt and berries.
