Strawberry Banana Bread
Banana bread but make it summery. Fill your home with wafts of sweet baked goodness, then sit down to Wimbledon this season with a plate of our favourite strawberry banana bread with coyo and more fresh strawbs. Basically as good as strawberries and cream, if not better!
RecipesIngredients:
- 3 very ripe bananas
- 100g vegan spread
- 2 eggs
- 100g coconut sugar + 1 tbsp
- 120g self raising flour
- ½ tsp baking powder
- Pinch Malden salt
- A punnet of strawberries
To serve:
- Coconut yoghurt
- More strawberries
Method:
- Pre-heat the oven to 180 degrees.
- Mash the bananas in a large mixing bowl. Add in the butter and combine well with the bananas.
- Add in the coconut sugar, leaving a little aside for the topping (about 1 tbsp) and combine. Then add in the eggs and beat together.
- Fold through all the dry ingredients until smooth and well combined. Then add the chopped strawberries and mix well.
- Tip the mixture into a lined loaf tin or distribute into 6 large muffin cases. Sprinkle over another tbsp of coconut sugar.
- Cook in the oven for 40 minutes or until cooked throughout. Leave to cool for 10 minutes or so before slicing.
- Top with coconut yogurt, and some chopped strawberries or eat as is, still delicious!
