Strawberry Banana Bread

Banana bread but make it summery. Fill your home with wafts of sweet baked goodness, then sit down to Wimbledon this season with a plate of our favourite strawberry banana bread with coyo and more fresh strawbs. Basically as good as strawberries and cream, if not better!



  • 3 very ripe bananas
  • 100g vegan spread
  • 2 eggs
  • 100g coconut sugar + 1 tbsp
  • 120g self raising flour
  • ½ tsp baking powder
  • Pinch Malden salt
  • A punnet of strawberries

To serve:

  • Coconut yoghurt
  • More strawberries


  1. Pre-heat the oven to 180 degrees.
  2. Mash the bananas in a large mixing bowl. Add in the butter and combine well with the bananas.
  3. Add in the coconut sugar, leaving a little aside for the topping (about 1 tbsp) and combine. Then add in the eggs and beat together.
  4. Fold through all the dry ingredients until smooth and well combined. Then add the chopped strawberries and mix well.
  5. Tip the mixture into a lined loaf tin or distribute into 6 large muffin cases. Sprinkle over another tbsp of coconut sugar.
  6. Cook in the oven for 40 minutes or until cooked throughout. Leave to cool for 10 minutes or so before slicing.
  7. Top with coconut yogurt, and some chopped strawberries or eat as is, still delicious!
