Winter Breakfast Crumble
Crumble for breakfast - that's living. Particularly as its full of nourishing, fibre-rich ingredients that will keep you happy, satisfied and won't spike your glucose levels first thing. Cinnamon spiked stewed apples and winter berries topped with a crunchy oaty and nutty topping. What more could you want on a cold crisp winter's morning?

Ingredients:
- 2-3 medium red apples, chopped into cubes
- 100g fresh or frozen blackberries
- 1 tbsp coconut sugar
- 2 tsp cinnamon
- 5 tbsp coconut oil
- A splash of water
- 150g Rolled oats
- 100g Ground almonds
- 50g Coconut sugar
- 50g Pumpkin seeds
- Salt
- Chopped hazelnuts
To serve (optional):
- Coconut yoghurt
Method:
- Preheat your oven to 180 degrees Celsius.
- Add the coconut oil to a saucepan and melt. Add in the chopped apples with the cinnamon and stir. Add a splash of water and 1 tbsp coconut sugar and leave on a medium heat to soften for 10 minutes. After 10 minutes add in the frozen berries and leave to simmer for another 5 minutes.
- In a mixing bowl add the oats, ground almonds, a tsp cinnamon, the rest of the coconut sugar, salt (can also swap for maple syrup), 4 tbsp of melted coconut oil and pumpkin seeds. Mix to combine.
- In a baking tray spoon in the stewed apple and berries. Pour the crumble topping over the fruit, with the option to sprinkle with a little extra coconut sugar and chopped hazelnuts on the top.
- Bake in the oven for 30-35 minutes until golden on the top. Serve warm with a dollop of creamy coconut yoghurt and some extra fresh fruits for breakfast or pudding. Mmmm.
