Zesty tomato & caper salad
Fresh juice tomatoes, topped with zingy capers, lemon zest and tangy red onion.
RecipesIngredients
- 1 red onion, thinly sliced
- 2 lemons
- 500g Heritage tomatoes
- 2 tbsp capers
- 2 tbsp olive oil
- Salt and pepper
Method
- Zest the two lemons and put the zest to one side.
- Thinly slice the onion and place in a large mixing bowl with the juice of two lemons.
- Chop the tomatoes place them on a large platter.
- Top with the onions and capers, sprinkle over the lemon zest and a good few glugs of olive oil. Season.
