Zesty tomato & caper salad

Fresh juice tomatoes, topped with zingy capers, lemon zest and tangy red onion.



  • 1 red onion, thinly sliced
  • 2 lemons
  • 500g Heritage tomatoes
  • 2 tbsp capers
  • 2 tbsp olive oil
  • Salt and pepper


  1. Zest the two lemons and put the zest to one side.
  2. Thinly slice the onion and place in a large mixing bowl with the juice of two lemons.
  3. Chop the tomatoes place them on a large platter.
  4. Top with the onions and capers, sprinkle over the lemon zest and a good few glugs of olive oil. Season.
