Avocado and kale panini with pesto
The perfect sandwich, a classic panini filled with avocado, kale, beef tomatoes and a homemade pumpkin seed pesto. Toasted sandwiches are one of the best comfort foods and this recipe doesn't disappoint.

4 paninis
2 avocados, ¼ for each panini
1 large beef tomato, cut into 8 thin slices
4 small handfuls of kale, roughly chopped
For the pesto
2 tbsp pumpkin seeds
2 tbsp cashew nuts
3 tbsp rapeseed oil
3 tbsp water
small bunch basil
pinch Malden salt
Method
The perfect sandwich, a classic panini filled with avocado, kale and a homemade pumpkin seed pesto. Toasted sandwiches are one of the best comfort foods and this recipe doesn't disappoint.
Slice open your panini and slather the pesto on each slide. Fill the bottom slice with the kale, then the avocado and tomato and place the top of the panini on. Heat a griddle pan and place the panini on it and cook for 2 minutes, applying pressure to the top. Then flip over and toast the bottom, again applying pressure to the top. Enjoy!
To make:
Firstly make the pesto by placing all of the ingredients in a food processor and blitz until smooth.Slice open your panini and slather the pesto on each slide. Fill the bottom slice with the kale, then the avocado and tomato and place the top of the panini on.
