Marinated tofu with noodles

I find that there is really only one way to cook tofu and that is to marinade it and then fry it. Tofu is not the most flavourful of ingredients but it is the perfect vehicle for flavour and so loading it up with tamari, chilli and sesame works perfectly.

Ingredients

  • 400g firm tofu
  • 2 tbsp tamari sauce (or soya sauce)
  • 1 tsp sesame oil
  • 1 tbsp maple syrup
  • Pinch chilli flakes
  • 1 tsp black and white sesame seeds
  • 500ml veg stock
  • 1/2 small spring greens cabbage, thinly sliced
  • 1 courgette, thinly sliced
  • Small bunch coriander, roughly chopped
  • 200g glass noodles
  • 1 lime

Method

  1. Place the tofu on a large plate. Mix the tamari sauce, sesame oil and maple syrup in a small bowl and pour it over the tofu. Allow the marinade to soak in for a few minutes.
  2. Meanwhile, place the stock in a medium sized pan and bring to the boil. Once simmering add in the veg and noodles and cook for just a minute or two until the noodles have softened and then veg still has a good crunch. Divide the noodles, veg and stock into two bowls and set aside while you fry the tofu.
  3. On a high heat, add a little sesame oil to a non-stick frying pan and add in the tofu. Pour over any remaining liquid from the marinade. Cook on both side for around 2-3 minutes until the marinade has created a dark, crispy skin on the tofu.
  4. Place the tofu on the veg and noodles. Garnish with the coriander leaves and some extra chilli flakes, sesame seeds and a squeeze of lime.
