Rhian's Chilli Salmon with Coconut Broccoli Rice

Founder of ARTAH, Rhian (also nutritionist and naturopath) has shared this wonderful recipe of hers with chilli coated salmon and the most delicious crispy brown rice, with coconut cream and blitzed broccoli blended through. A higher intake of essential fatty acids, such as omega 3 from oily fish, can help reduce inflammation and improve insulin sensitivity and glucose tolerance. This delicious, thermogenic recipe (thanks to the chilli to rev up your body's essential metabolic functions) has omega 3 at the centre of its goodness.

Ingredients:

For the dressing

  • 2 tbsp olive oil
  • 1 tbsp sesame oil
  • 1 tbsp tamari
  • 1 tsp maple syrup
  • 1 tsp apple cider vinegar
  • Juice of 1/2 a lime

  • 200g prepared brown rice
  • ½-1 large head of broccoli 
  • 1 (x 240g) tinned organic coconut cream
  • 2 tbsp desiccated coconut
  • 1 tsp salt

  • 1 tbsp coconut oil, 
  • 2 garlic cloves / roughly chopped, 
  • 2 red chillies / roughly chopped, 
  • 1 salmon fillet per person // or extra firm tofu, cut into cubes
  • Handful of snow peas per person
  • 1 tsp chilli flakes (optional)
  • Juice and zest of 1/2 a lime, 
  • Small handful coriander / roughly chopped reserving some to serve 
  • 2 tsp black sesame seeds / to serve

Method:

  1. Place all the ingredients for the dressing in a clean jam jar with the lid firm attached and shake to combine.
  2. Preheat your oven to 200°C/180°. Place cooked rice and broccoli ‘rice’ in a suitable baking dish and pour over the coconut cream and fold in the desiccated coconut and 1/2 tsp of salt.
  3. Bake in the oven for 30 minutes until crispy.
  4. In a large frying pan or wok add the oil. Once hot add the garlic, chilli, salmon or tofu cubes, snow peas and fry for 6-8 minutes, until cooked through.
  5. Remove from the heat to stop them over cooking and toss in the chilli flakes, lime juice, zest, coriander, 1/2 salt and pepper.
  6. Serve immediately alongside the rice, dressing, wedges of lime, remaining coriander and sesame seeds. We also serve us with a side of greens and tomatoes.
