Squash, Black Bean & Tomato Tray Bake
A tray bake is one of those lovely things that in some ways gives you back time. Instead of beginning in the kitchen and staying there doing things for an hour to get dinner on the table, instead you go there, put a few things on a baking tray, leave, do whatever it is you want to do in 30 minutes, and come back to some deliciously crispy concoction that appears from your oven. This is a colourful, hearty, vibrant version of a tray bake and one that is likely to become a staple. If you don't have black beans you can replace them with any bean or chickpeas work well too. If you're cooking for more than two simply double up all the ingredients.

Ingredients
- 1 red onion, peeled and sliced
- 4 cloves garlic, peeled and crushed
- 1/2 butternut squash, thinly sliced
- 400g black beans
- 150g cherry tomatoes, cut in half
- 1 tbsp olive oil
- Good pinch of Maldon salt
- Few grinds of black pepper
- 150g vegan feta (or dairy)
- Handful coriander, roughly chopped
- Handful mint leaves, roughly chopped
- Juice of 2 limes

Method
- Pre-heat your oven to 180 degrees.
- Place the onions, garlic, butternut squash, black beans and cherry tomatoes on the baking tray. Do this lovingly, this dish has the potential to be very pretty so perfect placement makes all the difference! Drizzle over the oil and add the salt and pepper. Place in the oven for 20-30 minutes depending on how crispy you like you veggies. I'd go for a safe 25 minutes if you're unsure.
- Once cooked, add the feta, coriander, mint and juice of two limes. Season with more salt and pepper to taste. Place the tray in the middle of the table with a big serving spoon and two bowls. Enjoy.
