BBQ tofu and pak choi with tamari and ginger dressing

Having a BBQ this weekend and need some inspiration for a vegetarian dish? This is IT! Korean-style pak choi and tofu. Korean food is a harmonious blending of sweet, spicy and sour flavours. This recipe, although very simple, shows the core Korean balance and the Pak Choi is the perfect vehicle for sweet chilli and garlic flavours.

BBQ or griddle pan

Ingredients

50g fresh ginger, grated
3 garlic cloves, sliced
1 tbsp honey
3 tbsp tamari
Pinch chilli flakes
300g firm tofu, cut into sticks
4 small pak choi, cut into quarters through the stalk
Fresh coriander to garnish
Brown rice and lime wedges to serve

Method

  • Mix together the ginger, garlic, honey, tamari, sesame oil and chilli powder in a bowl
  • Add the tofu and pak choi to the bowl, turning to coat. Leave to marinade for 30 minutes.
  • Remove the tofu and pak choi from the bowl (keep the marinade). Griddle the tofu and pak choi on a hot BBQ or griddle pan until the tofu is crisp on all sides and the pak choi is slightly wilted
  • Place the tofu and pak choi on a serving platter and pour over the remaining marinade. Garnish with coriander and serve with brown rice and lime wedges for squeezing over.
