Cashew Cauliflower Cheese

I am a big cauliflower cheese fan, I would go so far as to say that I feel no roast is complete without it. It is that rich, creamy, savouriness that brings everything together! Although I am not vegan, I have significantly reduced my dairy intake over the last few years and am always looking for alternatives. I decided to experiment with a cashew white sauce and I think this is a really good alternative. Marmite is the secret ingredient that gives it that moorish umami taste!

Ingredients

  • 250g cashew nuts
  • 100ml boiling water
  • 150ml oat milk
  • 1 tbsp rapeseed oil
  • ½ tsp Maldon salt
  • 1 tsp marmite
  • 1 cauliflower, cut into small florets
  • 50g pistachios, chopped

Method

  1. Preheat your oven to 180 degrees.
  2. Place the cashews in a nutribullet. Pour over the hot water, oat milk, rapeseed oil, salt and marmite and blitz until completely smooth. Texturally you want something very similar to a white sauce so if it is too firm add more oat milk.
  3. Place the cauliflower florets in an over proof dish and pour over the sauce so that they are completely covered. Sprinkle with the pistachios and cook in the oven for 20 minutes and then switch it to the grill function and grill for 2-3 minutes until golden on top.
