Chickpea Flatbread or Socca

Socca is a traditional Italian dish. It is a flat, thin, unleavened pancake made from chickpea (gram) flour. Absolutely delicious with a wholesome taste, this dish is naturally wheat and gluten free.

Ingredients

1 cup chickpea flour (also called gram flour)
1 cup water
1 1/2 tablespoons rapeseed oil
1/2 teaspoon rock salt
1 tablespoon fresh thyme, chopped
1 clove garlic, chopped

Method

Make the chickpea batter by whisking together all the ingredients. Leave the batter mix to sit for an hour and half to let the flour absorb the liquid.

Set the oven to 180°. Pour the batter mixture on to a round or rectangular tin making sure it has sides. Place in the oven for 20 minutes.

You can alternatively cook this bread as you would a pancake. Make sure your pan is nice and hot before pouring and turn when you can see it starting to cook from on top.

Cut into slices and serve with some grilled fish, chicken or dips!
