Dan Dan Noodles


Serves 4


  • 30ml sesame oil
  • 1 garlic clove
  • 1 thumb of fresh ginger
  • 2 red chillies
  • 200g buckwheat noodles
  • 60g smooth almond butter
  • 50ml Tamari or soy sauce
  • 4 spring onions
  • 2 carrots
  • 2 pak choi
  • 20g fresh coriander
  • ½ lime


  1. Finely dice the chillies, garlic and ginger and sweat down in the sesame oil for 4 mins, being careful not to burn.
  2. In a small saucepan mix the almond butter and Tamari, bring to a simmer and reduce for 20 mins. Remove from the heat and allow to cool.
  3. Meanwhile bring a pot of salted water to the boil and add the buckwheat noodles for 3 mins. Once cooked drain in a sieve.
  4. Thinly slice the carrots and spring onions and cut the pak choi into slices.
  5. Stir fry the vegetable in a tbsp of sesame oil for 2 mins.
  6. Mix the garlic, ginger and chilli mix with the noodles and almond butter sauce. Lastly mix in the vegetables.
  7. Top with a sprinkle of toasted sesame seeds, finely chopped coriander and a squeeze of lime... enjoy!
