Dan Dan Noodles

Ingredients
- 30ml sesame oil
- 1 garlic clove
- 1 thumb of fresh ginger
- 2 red chillies
- 200g buckwheat noodles
- 60g smooth almond butter
- 50ml Tamari or soy sauce
- 4 spring onions
- 2 carrots
- 2 pak choi
- 20g fresh coriander
- ½ lime
Recipe
- Finely dice the chillies, garlic and ginger and sweat down in the sesame oil for 4 mins, being careful not to burn.
- In a small saucepan mix the almond butter and Tamari, bring to a simmer and reduce for 20 mins. Remove from the heat and allow to cool.
- Meanwhile bring a pot of salted water to the boil and add the buckwheat noodles for 3 mins. Once cooked drain in a sieve.
- Thinly slice the carrots and spring onions and cut the pak choi into slices.
- Stir fry the vegetable in a tbsp of sesame oil for 2 mins.
- Mix the garlic, ginger and chilli mix with the noodles and almond butter sauce. Lastly mix in the vegetables.
- Top with a sprinkle of toasted sesame seeds, finely chopped coriander and a squeeze of lime... enjoy!
