Lady and the Tramp Valentine's Courgetti

They say the way to a man's heart is through his stomach. As it's Valentines Day, why not whip up a bowl of courgette spaghetti with king prawns. And add a splash of loving.

Non-Stick Frying Pan

Ingredients

3 courgettes
1 tsp olive oil
2 shallots, finely sliced
100g cherry tomatoes, halved
1 handful sunflower seeds
½ red chili, deseeded and finely chopped
150g king prawns, de-shelled
1 handful basil, roughly chopped
1 pinch malden salt
1 pinch cracked black pepper

Method

Using a Julienne Peeler, grate the courgette into long linguine. Once you reach the soft seedy part of the courgette, stop peeling. Set the courgette linguine aside.

Heat a little oil in a non-stick frying pan and add in the shallots; cook for 10 minutes until soft and translucent. Then add the tomatoes, sunflower seeds and chilli and cook for a further 5 minutes until the tomatoes have softened. Now add in the king prawns and cook until pink. This should take around 5 minutes. Finally add in the basil and courgette linguine and heat through. Season with Malden salt and cracked black pepper. Serve in a big sharing bowl.
