Radish, courgette, cucumber, edamame and cashew nut salad

If the September heat wave has got you craving a refreshing salad, this recipe won’t fail to deliver with its crunchy radishes and courgette, creamy roasted cashew and zingy lime juice.

Baking tray
Sharp knife
Chopping board

Ingredients

70g cashew nuts
1 courgettte, finely diced
1 cucumber, finely diced
6 radishes, cut into quarters
1 handful edamame
¼ small white cabbage, finely chopped
1 handful chives, finely chopped
1 handful coriander, finely chopped
Juice of a lime
Flaked sea salt
Pinch cracked black pepper

Method

Serves 2

Place the cashew nuts on a baking tray and roast in the oven for 8-10 minutes until golden. Remove and leave to cool.

Place the rest of the ingredients in a bowl and add in the cashew nuts. Mix well and serve. This recipe also goes we with grilled chicken or salmon.
