Strawberry and Coconut Eton Mess

Our delicious version of the classic Eton Mess is the perfect dinner party pudding; impressive, easy to prepare and healthy, the combination of creamy coconut yogurt and strawberries are sure to satisfy everyone's tastebuds!



Makes 4
200g strawberries, halved
250g coyo yoghurt

For the coconut macaroons:
4 egg whites
pinch of salt
100g desiccated coconut
2 tbsp honey

A few mint leaves to garnish


Preheat the oven to 180°. Line a baking tray with greaseproof paper.

Make the coconut macaroons. In a bowl mix together the egg whites, salt and honey, then add the coconut. Spoon the mixture onto a tray. Place in the oven for about 10 minutes, be careful not to let these catch. Leave to cool on a wire rack.

Next, assemble your eton mess either in one dish or 4 individual sundae dishes. Layer the strawberries, coyo yoghurt and coconut macaroons and top with some fresh mint. Enjoy!
