10th Feb, 2015

  • 1 egg
  • 2 tbsp gluten- and wheat- free flour
  • 75ml rice milk
  • Pinch salt
  • Pinch pepper
  • 100g sweetcorn
  • For the salad:
  • 1 handful of spinach
  • 1/2 cucumber, diced
  • 60g cherry tomatoes
  • 1 handful of coriander, roughly chopped
  • 1 tsp sunflower seeds, toasted

Equipment required:

  • Whisk
  • Frying Pan

Crack the egg into a bowl and beat. Then add in the flour, milk, salt and pepper and whisk together. Add in the sweetcorn and combine well. Leave the batter to rest for 20 minutes.

Make the salad by combining all the ingredients.

To make the fritters, heat a little oil in a frying pan and gently spoon 1-2 tablespoons at a time, depending on what size you want. Cook on each side for 2-3 minutes until golden.

Serve with the salad.

Spring Veggies with Asian dressing

All things green and glorious come into season in Spring, spinach, sprouting, courgette and cauliflower to name but a few. We’ve selected our favourites and served them with a zingy Asian dressing.

Rhubarb granita and banana sundae

Granita is a semi-frozen dessert that is typically made with fruit. This rhubarb version is refreshing and tart, perfect with sweet and creamy banana ice cream. Make sure to use the ripest bananas for the ice cream, as they will be the sweetest. Honeyed pecans are a lovely, crunchy topping.
