Sweetcorn Fritters with Chopped Spinach and Sunflower Seed Salad

Ingredients
1 egg
2 tbsp gluten- and wheat- free flour
75ml rice milk
Pinch salt
Pinch pepper
100g sweetcorn
For the salad:
1 handful of spinach
1/2 cucumber, diced
60g cherry tomatoes
1 handful of coriander, roughly chopped
1 tsp sunflower seeds, toasted
Method
Crack the egg into a bowl and beat. Then add in the flour, milk, salt and pepper and whisk together. Add in the sweetcorn and combine well. Leave the batter to rest for 20 minutes.
Make the salad by combining all the ingredients.
To make the fritters, heat a little oil in a frying pan and gently spoon 1-2 tablespoons at a time, depending on what size you want. Cook on each side for 2-3 minutes until golden.
Serve with the salad.
