Tomato and onion salad

There is nothing better than creating a dish in less than 10 minutes and a tomato and onion salad is the best example of this. The key to its success is always in choosing the best quality ingredients so go for plump, ripe, juicy tomatoes, crisp red onions, capers or gherkins and a good quality olive oil.

Ingredients

  • 400g or 1 tin cannellini or butter beans
  • 150g cherry tomatoes
  • ¼ small red onion
  • 100g capers or gherkins
  • Zest of half a lemon
  • Good glug of olive oil
  • A pinch of salt
  • A pinch of pepper

Method

  1. Slice the tomatoes in half and finely chop the onion. If you’re using gherkins, finely chop those too.
  2. Assemble the dish by placing the beans on a serving platter, and top with the cherry tomatoes, onion and capers/gherkins.
  3. Drizzle with the olive oil, scatter over the lemon zest, season and serve.
