Avocado on toast

It's the breakfast that never fails to please because it really is a nutritious as it is delicious. Creamed avocado, pumpkin seed and lettuce salad on gluten-free bread is the perfect sugar-free way to start the day.

Ingredients

4 Avocados
Juice of 1 lemon
1/2 iceberg lettuce, finely sliced
1 yellow pepper, finely diced
1 spring onion, finely diced
1 handful cashew nuts, toasted
1 handful pumpkin seeds, toasted

Method

With so much focus on us consuming too much sugar, we thought we'd share with you the perfect sugar-free breakfast. Commercial cereals are the main culprit for 'hidden sugar' with most of them containing over 7 tea spoons of sugar per serving.

This breakfast is a great alternative, it provides a rich array of nutrients including Vitamin E, Omega 3 and fibre. I love the crunchiness of the seeds combined with the creaminess of the avocados, so the fact that its nutritious is simply a bonus.

To make:

Place two of the avocados in a blender with the lemon juice and blitz until smooth and creamy. Place this mixture in a large mixing bowl. Slice the other two avocados in half and remove the stone. Scoop out the flesh with a large spoon and then roughly dice it. Add this to the bowl with the rest of the ingredients and mix well. Serve on your favorite gluten-free bread.
