Banana and walnut cookies

Chewy, oaty, gooey cookies that make for the perfect sweet snack or breakfast. They are also oil free, as the healthy fats from the ground flax and walnuts bind the cookies together and add to the rich, moist texture.


Makes 6 big cookies.


  • 4 medium size overripe bananas mashed
  • 1/4 cup or 60ml almond milk
  • 1/2 tsp cinnamon
  • 1/2 tbsp baking powder
  • 1/4 cup or 30g flax meal
  • 1 and 1/3 cup or 130g ground almonds
  • 1 tsp cashew butter
  • 1/2 cup or 50g chopped walnuts
  • 2/3 cup or 100g gf rolled oats


  1. Preheat the oven to 180 degrees.
  2. Mash the bananas and mix in the almond milk.
  3. Add all the dry ingredients, except the oats, and the cashew butter and combine. Fold in the walnuts and oats.
  4. Use a spoon to evenly distribute the batter onto a baking tray and slightly flatten.
  5. Bake for 25 minutes. Enjoy!
