Brown Rice, Radish, Artichoke and Spinach Salad
Our brown rice, radish, artichoke and spinach salad has every ingredient you need to power through the day. Now this is a salad you definitely don't want to miss.

75g brown rice
6 radishes, halved
100g tinned artichoke hearts, halved
2 handfuls of spinach, roughly chopped
1 spring onion, finely sliced
1 handful of chives, finely chopped
1 tsp rapeseed oil
Sea salt and black pepper
Method
Place the rice in three times the amount of water and simmer for 20 minutes until cooked. Transfer to a sieve, run under cold water and drain.
Combine with the rest of the ingredients in a large bowl and serve.
