Butterbean Stew
There is nothing more satisfying than piling a load of wholesome ingredients all into one pan and letting them simmer together to effortlessly produce something comforting, delicious and hearty. This bean stew is a joy to cook and eat!
RecipesIngredients
- 1 onion
- 7 cloves garlic
- 1 carrot, peeled and diced
- 2 tomatoes, diced
- 1/2 red pepper, diced
- 150g kale
- 300g butterbeans
- 2 tbsp butterbean mash (from our Veg Box or 100g of mashed butter beans if you don’t have this)
- 2 sprigs thyme
- 1 sprigs rosemary
- 300ml veg stock
Method
- Finely slice half the onions and place them on a baking tray with 5 cloves of garlic. Drizzle in oil and add salt and pepper. Roast in the oven for 15-20 mins until golden.
- Meanwhile, finely chop the remaining onions and garlic, place in a large pan and sauté in olive oil until soft. Add in all the ingredients but only half the kale, 300ml of stock or just hot water, place the lid on the pan and simmer for 25 mins.
- Throw in the rest of the kale turn the heat off and lid lid back on and leave for rest for 10 mins.
- Serve with the roasted onions and garlic on top. Enjoy as it is or with some some soda bread.
