Ceviche Dressing Recipe

This dressing is Peruvian-inspired, imitating a 'leche de tigre' or 'Tiger's Milk' marinade. It's super fresh, super zingy, and punchy. Everything you want in a light dressing to pair with a rainbow bowl of goodness.


Makes 1 pot (about 3-4 servings).


  • 6 garlic cloves, peeled
  • 1/2 peeled shallot
  • 3 tbsp ginger, grated
  • 2 red chillis, deseeded
  • Juice of 3 limes
  • 4 tbsp rapeseed oil
  • 2 tsp salt


  1. Blitz all the ingredients together until smooth.
