Herby Gnocchi and Peas

Ingredients

  • 2 large white potatoes
  • 1 egg
  • 170g GF flour
  • 1 tbsp olive oil
  • 3 sprigs thyme
  • 3 sprigs rosemary
  • 150g frozen peas
  • 1/2 tsp Malden salt
  • Few twists black pepper

Recipe

  1. Place the potatoes in a pan of cold water and bring the pan to the boil. Boil until the potatoes are soft throughout. Drain and leave to cool then peel the skin off and discard.
  2. Mash the potato in a large bowl and then make a well in the centre. Crack the egg into the centre and combine the potato and egg to form a soft wet dough. Tip the dough onto a floured surface and scatter with the rest of the flour.
  3. Knead the flour into the dough. Form a ball with the dough and separate it in four. Roll the dough into long sausage shapes and the cut each one into 2cm thick pieces.
  4. Place a pan of water on the hob and bring to the boil. Drop the gnocchi into the water, when it rises to the top it is cooked, scoop it out and set aside on some kitchen roll.
  5. Place a pan on a medium heat and add a little oil, add in the herbs and gently heat until fragrant then add the gnocchi and fry until golden. Once cooked remove the gnocchi and add in the peas to the pan and quickly sauté with salt and pepper.
  6. Place the peas in the serving bowl and top with the gnocchi and a few sprinkles on thyme leaves.
  7. Add seasoning to taste and serve.
