Kiwi and Lime Bircher Muesli

  • 80g porridge oats
  • 200ml apple juice, preferably freshly juiced
  • 70ml almond milk
  • Pinch of cinnamon
  • Zest of 1/2 lime
  • 1 tsp honey
  • 1 apple, grated
  • 1 kiwi, peeled and diced

Equipment required:

Place the oats in a large bowl and cover with the apple juice, almond milk, cinnamon, lime zest and honey. Combine and cover with clingfilm, place in the fridge and leave to soak for 20 minutes.

Remove from the fridge and stir through the grated apple and kiwi.

Gluten-Free Pancakes with Spiced Syrup and Blueberries

This super simple and speedy pancake recipe will have jaws dropping when you bring them piled high to the table. Using fresh spices in the homemade syrup really brings the dish to life, and flaked almonds and blueberries sprinkled on top make for a very beautiful dish.

You can prepare the pickled onion, black beans and ranch dressing well in advance, so all you need to do at the last minute is fry the battered cauliflower and make the avocado salad. Warm the tortillas through and you are good to go.
