One Pot Green Stew
What's better than a comforting and ultra-delicious veggie-packed green stew I hear you say? A one-pot green stew. Easy, fuss-free, a little different and FULL of nutrients. This is the ultimate healthy midweek dinner to lift the spirits and the gut microbiome this January.

Ingredients:
- 1 white onion, diced
- 2 garlic cloves, crushed
- 1 knob of ginger, crushed
- 2 green chilli, chopped
- 2-3 handfuls of baby spinach
- A handful of parsley
- 1 tbsp miso paste
- 400ml veg stock
- 1/2 zest and juice of a lime
- 3-4 parsnips, chopped into moons or half moons
- 4-5 stalks of cavolo nero, chopped into chunks
- 200g stringless beans, chopped roughly
- 1 head broccoli, cut into florets
To garnish (optional):
- 2 spring onions, chopped
- 1 tbsp coconut yoghurt
- 1 tbsp chilli oil
Method:
- Sauté the onions in a little cold pressed extra virgin rapeseed oil in a pot, over a medium-high heat until softened. Add the garlic, half the chilli and ginger and soften further.
- Add the spinach, parsley with the garlic, ginger, chilli and half the onions into a food processor. Add in the miso, stock and lime (reserving a little of the zest) and blitz until completely smooth.
- Add the liquid to the pot with the rest of the onions. Add in the parsnips and bring to the boil. Turn the heat down to simmer for 5-10 minutes. Then add in the broccoli and beans and simmer for a further 10 minutes. Add in the cavolo nero and stir whilst simmering for another 5 minutes.
- Once all the veg has cooked take off the heat and serve straight away! Top with a dollop of coconut yoghurt, a sprinkle of green chilli and spring onions and a dash of chilli oil. Finish with a little sprinkle of lime zest too. Toasted seeds would also be a lovely garnish!
