Peanut Roasted Salmon
A quick and easy way to spruce up your salmon fillets and bring a deep, nutty umami crust to add a little indulgence to your dinner. I’ve used peanut butter but you can also use almond or cashew butter if you prefer.

Ingredients
- 100g peanut butter
- 50ml tamari
- 50ml sesame oil
- Juice of 1 lime
- 4 salmon fillets
- 2 limes
- 4 spring onions, sliced
- Handful coriander, chopped
- Brown rice to serve
- Steamed Greens to serve
Method
- Combine the peanut or almond butter with the tamari, sesame and lime juice. Pour it over the salmon fillets.
- Place the salmon fillets in a preheated (180 degrees) oven for 15-20 minutes until the salmon is cooked throughout and the satay sauce is golden brown. Remove from the oven and allow to cool for a few minutes.
- Squeeze over the lime juice, spring onions and coriander.
- Serve with brown rice and steamed greens (french beans or broccoli sprouting work well). Add flaked crushed chillies for an extra spicy kick.
