Peanut Roasted Salmon

A quick and easy way to spruce up your salmon fillets and bring a deep, nutty umami crust to add a little indulgence to your dinner. I’ve used peanut butter but you can also use almond or cashew butter if you prefer.

Ingredients

  • 100g peanut butter
  • 50ml tamari
  • 50ml sesame oil
  • Juice of 1 lime
  • 4 salmon fillets
  • 2 limes
  • 4 spring onions, sliced
  • Handful coriander, chopped
  • Brown rice to serve
  • Steamed Greens to serve

Method

  1. Combine the peanut or almond butter with the tamari, sesame and lime juice. Pour it over the salmon fillets.
  2. Place the salmon fillets in a preheated (180 degrees) oven for 15-20 minutes until the salmon is cooked throughout and the satay sauce is golden brown. Remove from the oven and allow to cool for a few minutes.
  3. Squeeze over the lime juice, spring onions and coriander.
  4. Serve with brown rice and steamed greens (french beans or broccoli sprouting work well). Add flaked crushed chillies for an extra spicy kick.
