Roasted squash and peanut dip with tempeh and Fukujinzuke

A loaded dip is the perfect lazy meal to make when your energy is low but you are lusting after a delicious, flavourful meal whilst still getting your nutrients. The combination of miso, sweet nutty squash and roasted peanut is truly unmatched, particularly when topped with crispy tempeh for some extra protein, and tangy Japanese-style pickles. Serve alongside some greens and mop up with some bread or crudités. Perfect.

Serves 2-4.

Ingredients

For the squash & peanut dip:

  • 1/2 butternut squash, cut into large chunks
  • 3 cloves garlic, whole
  • 1 heaped tbsp peanut butter
  • 1 tbsp miso paste
  • Juice of 1/2 lemon
  • 1 tbsp extra virgin olive oil
  • A splash of oat milk
  • A splash of water
  • Salt and pepper

To top:

  • 160g tempeh (we recommend Club Cultured's fresh tempeh), chopped into chunks
  • 1/2 tsp cayenne pepper
  • 1 tsp cold pressed rapeseed oil
  • 2 tbsp Fukujinzuke (we recommend Club Cultured's, but you can use another or other pickle)
  • 5-6 radishes, chopped into rounds
  • A small handful of coriander, chopped
  • A tsp toasted sesame seeds

Method

  1. Preheat your oven to 200 degrees celsius.
  2. After chopping the squash into cubes, add them to a baking tray with the garlic cloves and drizzle a little oil, with a touch of salt and pepper. Roast in the oven for 30-35 minutes until golden.
  3. Add your tempeh to a separate baking dish and cover in the cayenne pepper and a drizzle of oil. Use your hands or a spoon to mix until coated. Bake in the oven for 15-20 minutes until browned and a little crispy.
  4. When the squash has been roasted, add it into a processor with all the other ingredients for the dip and blend until smooth. You may need to add a little extra water to loosen the mixture, but it still should keep a thick, creamy texture.
  5. Spread the dip onto a plate and top with the tempeh, radishes, Fukujinzuke, coriander and sesame seeds. Serve as a delicious meal with a side salad and perhaps some bread to mop it up with. It would also make a perfect starter!
