Simple Chopped Salad
Really simple and satisfying chopped salad for every day lunch at home.
RecipesServes 1.
Ingredients:
- 50g mixed sprouts
- 25g pumpkin seeds
- 25g sunflower seeds
- 1/2 avocado, cubed
- 1/4 cucumber, quartered and cut into chunks
- 1/2 small pointed or sweetheart cabbage
- A handful of cherry tomatoes, halved
- 2 large gherkins, sliced horizontally
- 1/2 onion, diced
For the dressing:
- 1 tsp mustard
- 2 tsp apple cider
- 2 tsp olive oil
- Salt and pepper
Method:
- Sautéed mixed sprouts and mixed seeds on a medium heat for 5 minutes.
- Add to a bowl and add the pointed cabbage, cucumber, tomatoes, avocado, gherkin and onion.
- Make the dressing by adding all the ingredients into a jar and giving it a good shake to combine. Drizzle this over your salad and mix!
