Simple Chopped Salad

Really simple and satisfying chopped salad for every day lunch at home.


Serves 1.


  • 50g mixed sprouts
  • 25g pumpkin seeds
  • 25g sunflower seeds
  • 1/2 avocado, cubed
  • 1/4 cucumber, quartered and cut into chunks
  • 1/2 small pointed or sweetheart cabbage
  • A handful of cherry tomatoes, halved
  • 2 large gherkins, sliced horizontally
  • 1/2 onion, diced

For the dressing:

  • 1 tsp mustard
  • 2 tsp apple cider
  • 2 tsp olive oil
  • Salt and pepper


  1. Sautéed mixed sprouts and mixed seeds on a medium heat for 5 minutes.
  2. Add to a bowl and add the pointed cabbage, cucumber, tomatoes, avocado, gherkin and onion.
  3. Make the dressing by adding all the ingredients into a jar and giving it a good shake to combine. Drizzle this over your salad and mix!
