Two Poached Eggs with Avocado Smash

Craving something savoury? This breakfast is a nutrient powerhouse, packed with protein and healthy fats to keep you energized all morning.



2 eggs
1/2 avocado
1 tbsp pumpkin seeds
Pinch salt
Pinch pepper
1 slice rye bread


Place a pan of water on a high heat to boil. Turn to a gentle simmer and stir the water then crack open the eggs and drop them into the water and simmer for 2-3 minutes (or longer if you would prefer the yolks hard).

Place the avocado in a bowl and mash it together with the pumpkin seeds, salt and pepper.

Toast the bread and then assemble the dish by slathering over the avocado mix and placing the eggs on top.
