Father’s Day Feast

Food brings people together and there is nothing better than sitting down with the family to enjoy a delicious meal! Father’s Day is the perfect special occasion to go all out and prepare a feast for everyone to enjoy. We’re hoping for sunshine this Sunday so we have put together some great BBQ recipes, fresh summer salads and one incredible guilt-free pudding to get you inspired.

  1. Grilled Tuna Steak with Sesame Asparagus and Broccoli

A much meatier fish, fresh tuna is a great source of lean protein packed full of B Vitamins and Omega–3 fatty acids, excellent for your heart and skin health. We’ve teamed it with a refreshing Asian inspired side of greens. Make the most of the asparagus this Father’s Day before it goes out of season!

  1. Grilled Chicken with Courgetti and Pesto

Grilled chicken and pesto are always crowd pleasers! These seasonal ingredients like basil and courgettes will add vibrancy and incredible taste to your dish. The nutty pesto adds flavour and texture to the courgetti stripes. Don’t worry if you don’t own a spiraliser, a julienne peeler works just as well, or simply use a knife to slice thin strips into spaghetti.

  1. Stuffed Aubergine with Brown Rice and Lemon Yoghurt

This is an excellent vegetarian alternative or even served as a side dish to your main. The zesty yoghurt is so refreshing and works well with the vibrant spices and herbs infused in the smoky flavoured aubergine. The addition of brown rice makes this dish balanced and satisfying!

  1. Quinoa, Avocado and Seed Salad

This super healthy salad is packed full of nutritious ingredients. It is so delicious and so easy to make – a definite must for Father’s Day! Quinoa is a great wheat-free grain packed full of protein to keep you fuller for longer and the avocado provides the essential fatty acids and antioxidants for skin health.

  1. Raspberry and Peach Crumble

In June raspberries and peaches are so juicy and perfectly ripe! What’s better than a summer fruit crumble to end your meal with? We absolutely love this recipe and it’s what we’ll be baking this Father’s Day. The crumble is packed full of flavour and textures, using nuts, honey, ground almonds and oats for a delicious topping. Enjoy!
