A Big Breakfast Bowl
A good wholesome breakfast can set you up for the day. It is scientifically proven that people who have a healthier breakfast tend to steer clear of sugary, processed snacks. Give this recipe a try and be filled with goodness all day long.
RecipesIngredients
75g homemade muesli or plain jumbo oats
2 tbsp coconut yogurt (we love Coyo).
Juice of half a lime
A handful of blueberries
A handful of raspberries
Half an apple, finely sliced
100ml rice milk
1 tsp raw honey
Method
When my diet was a little on the ‘not-so-healthy’ side, the meal I would always skip or not care about would be breakfast. That seems totally bizarre to me now as I simply can’t function without a big helping of nutrient-dense breakfast. Whether its homemade granola or bircher muesli, eggs on rye bread or blueberry pancakes, breakfast sets you up for the day and can be the difference between snacking on sugary, processed foods and actually craving good healthy food throughout the day.
This recipe is so easy. I have used my homemade muesli, which is so simple! Just roast off some jumbo oats in the oven for 15 minutes until lightly golden and mix with your favorite nuts, seeds and dried fruit.
To my oats I have added coconut yogurt, a squeeze of lime juice, a handful of blueberries and raspberries, half an apple and 100ml of rice milk. Mix it all together and drizzle with raw honey to serve.
