Carrot & Quinoa Granola

With the weather turning a little cooler this week and after the bank holiday weekend, we fancied something a little warming this morning!

Ingredients

250g quinoa flakes
2 ripe bananas
2 small grated carrots
1 handful coconut flakes
1 handful sunflower seeds
2 tbsp honey
2 tbsp rapeseed oil

Method

Think baked carrot cake dough granola. This uses quinoa flakes rather than oats but you can use either. This is a super recipe if you’re looking for a way to have quinoa for breakfast. This recipe is quite a wet bake due to the carrot so keep it in an airtight container and use within 3 days.
Set the oven to 180 degrees. In a bowl mash together the banana, honey, carrot and rapeseed oil until you have a lumpy puree. Add in the dry ingredients and then using your hands mix it all together until you have a crumbly mixture. Place on a baking tray for 30 minutes and give it a turn every 10 minutes.
Allow to cool. This is delicious to eat when slightly warm still and served with yoghurt (of your choice) and fresh berries!
