Garlicky Lentil and Tomato Stew



  • 1 tsp olive oil
  • 1/2 red onion, sliced
  • 6 cloves garlic, sliced
  • 4 tomatoes, cut into quarters
  • 100g sweet potato, diced
  • 3 sprigs thyme
  • 3 sprigs rosemary
  • 500ml vegetable stock
  • 170g puy lentils
  • Brown rice or green salad to serve


  1. Heat a little oil and add in the onions and half of the garlic. Sauté until they are soft.
  2. Add in the tomatoes, sweet potato and herbs and sauté until the tomatoes are softened.
  3. Add in the vegetable stock and lentils and simmer for 20 minutes until the lentils are tender.
  4. In a small frying pan add a little oil and once it’s hot add in the rest of the garlic and cook until golden. Stir this through the stew and season to taste.
  5. Serve with brown rice or a green salad.
