Garlicky Lentil and Tomato Stew
RecipesIngredients
- 1 tsp olive oil
- 1/2 red onion, sliced
- 6 cloves garlic, sliced
- 4 tomatoes, cut into quarters
- 100g sweet potato, diced
- 3 sprigs thyme
- 3 sprigs rosemary
- 500ml vegetable stock
- 170g puy lentils
- Brown rice or green salad to serve
Recipe
- Heat a little oil and add in the onions and half of the garlic. Sauté until they are soft.
- Add in the tomatoes, sweet potato and herbs and sauté until the tomatoes are softened.
- Add in the vegetable stock and lentils and simmer for 20 minutes until the lentils are tender.
- In a small frying pan add a little oil and once it’s hot add in the rest of the garlic and cook until golden. Stir this through the stew and season to taste.
- Serve with brown rice or a green salad.
