Lily's Cabbage Sandwich

A what sandwich, we hear you say. Hear us out. Lily has shown us this easy (and nutritious) quick bite, which is the perfect thing when you are struggling for time or have minimal veg to work with.

Recipes

Makes 1 sandwich.

Ingredients:

  • 1/4 small white, hispi or sweetheart cabbage, shredded
  • 2 pieces of gluten-free bread
  • 3 tsp extra virgin olive oil
  • 1 beef tomato, sliced vertically
  • 2 large pickles/gherkins, sliced vertically into strips
  • 1 tbsp mayo (we love this one by Rubies in the Rubble)
  • Salt and pepper

Method:

  1. Take your shredded cabbage and put it in a bowl with 1 tsp of olive oil and a pinch of salt and pepper. Use your hands to massage the cabbage for 2-3 minutes and then leave aside to soften slightly.
  2. Toast your bread. When toasted add a tsp of olive oil to each side.
  3. Layer your sandwich with half the cabbage, followed by tomatoes, pickles, half of the mayo, more cabbage, the rest of the mayo and then sandwich up, and enjoy!
