Quinoa, apple and goji berry porridge
Rich in protein, iron and fiber quinoa is hot on the heels of its old friend the oat, for the title of most nutritious and filling breakfast.

100g Quinoa
200ml water
1/2tsp cinnamon
75ml almond milk
30g whole almonds
1 apple
1/4tsp nutmeg
25g goji berries
Method
Our goji berry and almond quinoa porridge is topped with baked apples and cinnamon. This hot creamy porridge bowl of goodness is the perfect way to start your day, it makes waking up to the cold weather a little more bearable.
To make:
Peal the apple and cut into 8 segments. Place the apple slices on a baking tray and sprinkle with nutmeg and cinnamon. Bake at 180c for about 7 minutes until the apple is soft but holding it shape.
Rinse the quinoa thoroughly under cold water before placing in a saucepan along with 200ml of cold water. Bring the water to a boil and cook the quinoa for 10 minutes until soft.
Place 20g of the almonds and the almond milk into a blender and blitz for 5 minutes until a thick almond paste.
Once the quinoa is cooked, drain the water and add the almond cream and a pinch of cinnamon.
Whilst you heat the quinoa through roast the rest of the almonds in the oven for about 7 minutes.
To serve, mix the goji berries through the quinoa and place into a bowl. Top the quinoa porridge with the rest of the almonds and baked apple slices.
