Cut the beetroot in half and put it in a glass bowl and cover with cling film. Put it in the microwave for 10 minutes.
Meanwhile whisk the eggs, maple syrup, melted coconut oil and salt in a large mixing bowl.
Weigh out all dry ingredients and sieve. Combine well in a bowl.
Once the beetroot has cooked, blitz in a magimix then add to the wet ingredients and stir to combine. Mix in the dry ingredients then pour into a lined baking tray. Bake for 30 minutes at 170C. Cool and cut either into large pieces or smaller squares.
